Vineyards:
The grapes come from the vineyards planted
during the last ten years, enjoying a Southly, and West South-Westerly exposure, situated
at an altitude of about 400 metres above see
level. Plantation arrangement: 5,000 vines
per Ha.
Average yeld:
Yield of grapes per Ha: 9,000 kgs per Ha.
Average Yield of grapes per vine: 1,8 Kgs with accurate selection of the grapes during harvest.

Hills characterised by medium-high slopes.

Wine making technique:
The particular vinification technique is
characterised by a soft pressing of the grapes,
and a delicate maceration on the skins, giving
the wine its typical rosé colour. The
fermentation which takes place at a controlled
temperature of 18° C., maintains the
traditional bouquet characteristic of the
nebbiolo grapes.
Refining:
Refining occurs in steal vats. The contact of
the wine with the yeasts is enhanced through
the mixing phases occurring into the vat.
Colour:
Typical and original cherry red.
Bouquet:
Floral and fruity, with a good persistence.
Taste:
Delicate, with its typical structure and
characteristics deriving from the nebbiolo grapes. Easy to drink because of the
particular production method. Serve at 10° -
12° C in accompaignment to delicate dishes
and savoury fish dishes. Perfect also as an
aperitif.
